A Sharpening Studio in the Palm of Your Hand
This is the most complete sharpening set in the Shimeru line. The Multi-Surface Rolling Sharpener combines the power of diamond and ceramic into a four-stage sharpening solution: #240 and #600 ceramic, and #400 and #1000 diamond plates.
Why This Combo?
#240 Ceramic: Aggressively reshapes damaged or heavily dulled knives.
#600 Ceramic: Smooths out rough edges and sets up the blade for refinement.
#400 Diamond: Durable grit for edge rebuilding on tougher steels.
#1000 Diamond: Ultra-fine edge finishing for clean, precise cuts.
How to Use:
Follow a progressive grit sequence based on your blade’s condition. Use ceramics for softer steel and diamond plates for harder steel or fast results. The built-in magnetic block offers two sharpening angles (15° & 20°), and the roller guarantees consistent contact and pressure.
Perfect For:
Mixed steel blades, from carbon to powder steels
Full edge repair to final polish in one compact system
Professional chefs who want every grit option at their fingertips
Crafted from professional-grade, heat-treated high-carbon steel, Shimeru Knives deliver exceptional sharpness, durability, and edge retention. From the first slice, you’ll experience the precision that sets us apart.
Our knives are guaranteed to be the sharpest you’ve ever owned. No exceptions, no compromises—just razor-sharp blades that elevate your culinary experience.
Shimeru Knives feature uniquely designed handles that not only add a sophisticated touch to your kitchen but also provide a comfortable, secure grip for effortless chopping and slicing.
With a double-bevel edge sharpened to 15°—compared to the standard 20-25° of most Western knives—our blades allow for smoother, faster cuts, enhancing your cooking efficiency by 2 to 3 times.

Sold OutReally good sharpener overall. Gets my knives super sharp. My only minor gripe is I wish the handle was a bit more ergonomic, my hand cramps a little if I'm doing a bunch of knives back to back. But the results are fantastic.
Perfect for someone who wants to get into sharpening but doesn't want to mess with loose stones and water. The magnetic hold is genius, no guessing the angle. My first try and I got a hair-popping edge.
Really impressed with how well this works. The four stages cover everything from repair to a fine polish. My only wish is that it was maybe a bit heavier? It's light, which is good for storage, but a little more heft might make it feel even more stable on the counter. That's a tiny thing though, the sharpening performance is top notch.
This sharpener works great, no doubt. Got my Global knife back to razor sharp and it was pretty quick. My only minor gripe is the handle shape, it's a little blocky for my hand. I got used to it after a few uses, but I wish it was a bit more contoured. Still, the results are fantastic and it's way less messy than my old setup.
I don't hate it, but I don't love it. The concept is cool but in practice it takes a bit of getting used to. The edge is acceptable. For a casual home cook like me, it might be overkill. A simpler, cheaper sharpener might have been sufficient.
Massive upgrade from the honing rod I was using. This actually removes metal and creates a new edge. The 400 diamond is great for my German steel knives, the 1000 for my Japanese ones. Works on everything.
The presentation box is nice, feels like a premium product. It's straightforward to use, just roll the knife through a few times on each stage. Results are fantastic.
Really good product. My knives are scarily sharp now. I suppose I just expected it to be a bit quicker? It's not slow by any means, but it's a proper sharpening session, not a two-second thing. Does a proper job though.
My old sharpener just made a mess of the edge. This one actually sharpens. The finish from the 1000 grit diamond is so smooth.
Used it on my gyuto and a couple of cheaper knives. Works a treat on all of them. The different grits are clearly marked which helps. Really pleased.
Does a fantastic job, the edge it puts on is great. It's a bit heavier than I was expecting when you pick it up, but that's not really an issue when it's on the counter. Very happy with it overall.
I was a bit nervous about sharpening my good Japanese knives but this makes it foolproof. The rolling action is smooth and the different grits mean you can do a proper job. Chuffed with it.
Birthday present for the wife, she's the chef in our house. She said its the best present she's got in ages, her knives are like lasers now. The magnetic hold is a clever touch.
This is a great bit of kit. The only reason it's not 5 stars is I found the instructions a bit basic, had to watch a quick video online to be sure I was doing it right. Once I got going it was perfect.
Bought this because I got a proper nakiri from you lot last month and wanted to look after it. Works a treat. Did the whole process from the 240 up to the 1000 and the edge is just stupid sharp now. Used it on some butternut squash last night and it went through the skin no bother. Really pleased with it.
Produces a lovely edge, really easy to use. I think for the price it could have maybe included a small angle guide for absolute beginners, but honestly you don't really need it. Works very well.
So I've always been a bit scared of sharpening my own knives, but this set makes it dead easy. The little guide thing holds the angle for you, which is a lifesaver. My old Global chef's knife was basically a butter knife, but after a few passes on the 240 and then the 1000, it's slicing paper again. Came in a really nice box too, felt proper posh.
Bought this for my husband whos always complaining about blunt knives. He loves it, said its dead simple and the results are brilliant. He's done all our knives now.
Finally a sharpener that doesn't ruin your knives. The ceramic and diamond combo is spot on. My prep time has literally halved because the knives just work.
Bought this after getting a proper Japanese knife, needed a way to look after it. This does the job perfectly, keeps the edge pristine without any guesswork.
Ok so I was sceptical about a roller sharpener, thought it might be a gimmick. But it's actually brilliant. The 400 grit diamond plate sorted out a few nicks in my cheaper knife in no time. The whole thing feels solid, not plasticky. Only thing is it took me a minute to figure out how to slot the stones in, but that's just me being daft.
Massive upgrade from the pull-through sharpener I had. That thing ruined a blade. This one, you can actually feel the different grits doing their job. The 600 ceramic gives a really nice smooth finish before you go to the diamond ones. My gyuto has never been this sharp, cuts through tomatoes like they're not even there.
Been using it for a few weeks on all sorts of knives, from my santoku to my mum's old carving knife. The ceramic stones are great for reshaping, the diamond for finishing. Does exactly what it says.
Got this as a birthday present for my husband who loves his Japanese knives. He was chuffed to bits with it. Said the diamond plates are much quicker than his old water stone for getting a decent edge back. He's used it on his santoku and it's made a massive difference, says onions just fall apart now.
Quick delivery and well packaged. The sharpener itself is solid, easy to use. My partner did all our kitchen knives in an evening, they're all like new.
